Strawberry Rhubarb Muffins (GF/DF)



I found a recipe for Blueberry Muffins, but had strawberries and rhubarb to use--so I changed the recipe a bit and the muffins were DELICIOUS!

Strawberry Rhubarb Muffins
1 Egg
1 Egg white
1 cup Milk Substitute (I used coconut milk which worked great)
1/2 cup Canola Oil
3/4 cup Rhubarb
1/2 tsp Cinnamon
2 cups GF flour (I used Pamela's Baking and Pancake Mix)
2 tsp Xanthan gum
1/3 cup Brown Sugar, packed
1 Tbsp + 1 tsp Baking Powder
1 tsp Salt (optional)

Topping:
1/4 cup Brown Sugar, packed
1/4 cup Chopped Pecans (optional--I left these out)
1/2 tsp Cinnamon

Preheat Oven to 350 degrees and grease bottoms of the muffin tins.
Beat eggs, stir in milk, oil and fruit. Stir in cinnamon.
In separate bowl, combine dry ingredients. Mix into wet ingredients until moistened.
Fill muffin tins 2/3 way full and top with toppings!
Bake for about 20 minutes and ENJOY! :)

Summer on it's Way!

So a few posts ago I listed 10 summer goals I had for myself--and I am proud to say a few have since been completed! :)
The other day I tried golfing with Jeff at the Rec Center--the only place Jeff dares to take me. Anyways, aside from a few "re-dos" (shhhh!) I did okay! Above all...I had a lot of fun and would love to go again!












I also tried backpacking over Memorial Day with Jeff, his brother Matt, and Matt's girlfriend, Kyleigh. We got swarmed by flies, hiked 16 miles in one day ( I was sore...), used make-shift bathrooms (aka logs), but overall had a blast! :)









I also tried out some new recipes! Since going gluten free/diary free I have made a lot of recipes from a blog called The Spunky Coconut.
The recipes have been really yummy--and healthy!! :)

Summer Must-Reads!

Here are a few books that I have been my favorites and I encourage everyone to read them as well! These books are either memories or historical fiction. Seriously--check them out and make them your summer reads!

1. The Same Kind of Different as Me by Ron Hall and Denver Moore--this is my favorite book of all time. It is a true story about a wealthy white man and a homeless black man and how their lives intersected. It is a Christian novel with a mix of funny, sad, moving, and clever.











2. The Red Tent by Anita Diamant--this is the story of Dinah from the Bible. Dinah was the only recorded daughter of Jacob and her story is told in her eyes. The author did an excellent job painting the background of this story and adding detail so the reader can picture life as a woman during Biblical times.











3. The Guernsey Literary and Potato Peel Pie Society by Mary Ann Shaffer and Annie Barrows--this is a story that takes place post WWII on Guernsey Island. It is comical, has romance, and is informational all in the same time! I loved it!
